We conduct peer-reviewed field and food research in the current food supply so we can establish the global standard around food quality - from field to plate.

Why it Matters

Not all food is created equal

The same crop can vary in nutritional quality by more than 40 times from one sample to the next, and most of what reaches our plates sits at the low end of that range. Yet there is still no agreed, evidence-based way to tell more nutritious food from less. That is the gap we exist to close.

Our Mission

Defining Nutrient Density, Together

Our role is to establish the scientific standards that govern how nutrient density is measured, so that any device, any lab and any system works from the same rigorous, evidence-based framework. We are defining the scale that industry-developed meters measure against; we do not build the meters ourselves, and the original prototype existed only to prove what is possible.

That is why, in 2025, we embarked on the Global Treaty for the Definition of Nutrient Density in Food, visiting six continents and conducting Listening Sessions with a wide range of stakeholders: subsistence farmers in Africa, researchers, scientists, farmers, growers, eaters, institutions, policymakers, food manufacturers, large corporates, and concerned citizens who want better-quality food to become the norm.

We are beginning with nutrient density definitions for 20 crops, the first in an iterative set of quality standards that will deepen and expand over time. It only carries weight if we build it together.

The Nutrient Density Study in Beef

Our flagship study examines how farming practices influence the nutrient density of beef across dozens of farms. Measuring mineral content, fatty acid profiles, antioxidants, and more - we are building the most comprehensive data set of it’s kind.

Beef was the proof. Wheat is next.

After beef, wheat. The Bionutrient Institute has launched its next definition project, carrying the lessons from our first study into one of the world's most widely grown staples, some 215 million hectares a year.

We are pairing soil and crop samples from 300 to 400 fields across our global network to build the Wheat Bionutrient Indicator: an openly published, 1 to 100, biomarker-based standard that links how wheat is grown to its nutritional quality, and that the whole supply chain can navigate by, from grower to miller to baker to eater.

There is a role for everyone in defining it.
